Preparation

 

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9×5 inch loaf pans.
  2. In a large mixing, combine sugar, oil and eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, allspice cinnamon, and clove.
  3. In medium bowl, combine flour, soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Divide batter between prepared pans.
  4. Bake in preheated oven until toothpick comes out clean, about 1 hour.

This Mediterranean Salad In A Jar is a healthy and delicious portable meal.

I think this salad in a jar is the perfect solution when you’re in a lunch rut – you can add chickpeas, black beans, nuts, use different greens (spinach, kale, arugula), and include proteins such as salmon or chicken if you like.

 

Ingredients:
2 tablespoons Antioxidant Salad Dressing
1/2 cup cherry tomatoes
1/2 cup cucumbers sliced
1/2 cup colored bell peppers chopped
1/3 cup cooked quinoa
2 tablespoons feta cheese crumbled
5 kalamata olives pitted
2 cups romaine lettuce cut up

 

Instructions
In a quart size jar, add salad dressing. Layer rest of ingredients in jar. When ready to eat, shake well and Enjoy!

2 Tbsp. chopped peanuts

 

PREPARATION

Blend the almond milk, ½ the banana, ice, peanut butter, cocoa powder, vanilla extract, and maple syrup until smooth. Transfer to a bowl and top with the cocoa nibs, granola, chopped peanuts, and remaining ½ banana.
